Garlic Parmesan Shrimp Scampi Pasta!

Ingredients

  • 8 ounces linguine
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon cajun seasoning
  • 1 tablespoon olive oil
  • 1/4 cup white wine OR chicken stock if you dont want to use alcohol
  • 1/4 cup freshly squeezed lemon juice
  • 4 tablespoons salted butter
  • 1 pound medium shrimp peeled and deveined
  • 6 garlic cloves pressed or grated
  • salt and freshly ground black pepper to taste
  • Zest of 1 lemon
  • 2 tablespoons chopped fresh parsley leaves
  • 1 cup freshly grated Parmesan cheese

Instructions

  • In a large pot of boiling salted water, cook pasta according to package instructions& drain well.

  • In a large, deep skillet, melt the butter over a medium-high heat.

  • Add in the shrimp, cajun seasoning, olive oil, garlic and red pepper flakes.

  • Stir periodically, until fully cooked- about 3 minutes.

  • Stir in wine OR chicken stock and the fresh lemon juice; season with salt and pepper

  • Lower to a simmer; remove from heat and stir in pasta, lemon zest, HALF a cup of the parmesan cheese and mix until fully incorporated.

  • Top with the last half cup of parmesan cheese & chopped parsley

  • Serve immediately

  • ENJOY!

    Used half a shallot and 4 cloves of garlic, and little over half the red pepper called for. Was soooo good!!!

    This was amazing! It was the hit of our Italian dinner, Feast of the Seven Fishes, on Xmas eve. The lemon zest gives it such a fresh taste. Loved it!

    I made this for dinner tonight. It was delicious. I substituted few things because we are in a rented home for vacation and I used Franks hot sauce because I couldn’t find the red pepper flakes at the store. That is about all that I had to change. I will definitely be making this at home. We are in Texas on vacation, and the Texas shrimp fresh from the water is great.

    I only used half the parmesan but otherwise followed the directions. I also used fresh posta. My wife and I liked it, but it was a little to lemony for our taste.

    This meal was amazing! I had it with my two little girls, 7 years old and 2 years old. Both of them liked it, but the seven-year-old did say it was a little too lemony for her. I think next time I will lay off the lemon juice a little bit and maybe half the amount of lemon zest. They also can’t handle large amounts of spice, so I would find some sort of garlic spice in place of the Cajun mix. This time, I had used lemon pepper spice in place of Cajun, so that may have also contributed to the over abundance of lemon flavor for them. Thank you for an awesome recipe though. I loved it!
