Or, better yet, try it atop a baked potato, green salad, or wrapped in a soft tortilla as a meal! What an easy meal that would be, especially for packing to take along in a lunch box. Black Bean and Corn Salsa Recipe

Prep Time: 10 minutes

Total Time: 10 minutes

An easy and flavorful salsa perfect for your next cookout, served with chips or as a condiment over grilled chicken or barbecue.

Ingredients

  • 1 can (14 1/2 ounces) diced tomatoes, well drained
  • 1 can (8 3/4 ounces) whole kernel corn, well drained
  • 1 cup canned black beans, drained and rinsed
  • 2 tablespoons chopped red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chile pepper
  • 1/4 teaspoon salt
  • optional- 1 tablespoon chopped fresh cilantro

Instructions

  1. Mix all ingredients in medium bowl. Cover.
  2. Refrigerate at least 30 minutes or until ready to serve. Serve with tortilla chips.

    Great and easy salsa, emphasis on easy! I see lots of recipes online, but if it’s not easy, there’s no way I’ll be able to actually deliver the goods, especially trying to watch two little kids!

    How can I make this with fresh tomatoes instead? Do I have to blanch, peel, and seed them?

      Yes you can, Amy. Just dice them up and use them fresh.

    I could eat this as a salad!!! What is the caloric count per serving and is canned tomatoes prefered over fresh? Whats healthier?

      I do not have the calorie count, Emily. Fresh tomatoes are fine to use for this if that is what you prefer.

    Anyone know if this recipe can be canned by steam or water bath? If so is canning time 15 minutes? Looking to try a new salsa recipe this year. Don’t want a real thick or real thin salsa.

    Anyone know if you can steam or water BATH can this salsa? If so is it 15 minutes? I need to find couple new recipes. Mom does not want a runny salsa or a thick salsa either. Some recipes call for lots of tomatoes paste as a thicker. Mom does not like much of that in her salsa.

    Anyone have tips I’d appreciate them.
