For the last few years, once the 4th of July passes, my mind immediately shifts to fall. I don’t want to wish away summer (actually, I live in Florida, so I kinda do!), but there’s something about July 4th coming and going that triggers autumnvibes for me. It’s odd because we still have so much summer left!

Well, this year is different. I’m not wishing away summer, and I’m not even close to feeling fall vibes. Strangely, even though the 4th came and went, I don’t even feel like summer’s started!!!

I’m happy that I’m not wishing away summer this year. On the contrary, I’m still planning out summer bucket lists and to-do lists. For example, I haven’t made any kind of s’mores desserts yet this year (even though I compiled a list of 30 Best S’mores RecipesYou Need To Try This Summer!!!), and I also haven’t made any berry pies or desserts with ice cream yet. I’m on it though. I still have loads of time to do all the summer desserts that I’m planning. Right??? I hope so.

We haven’t hit the beach enough. We need to get over to the beach to get in some good volleyball games this summer. That’s a regular summertime activity for us. Otherwise, I honestly just love hearing lawnmowers humming around the neighborhood, the smell of fresh-cut grass, and the ubiquitous scent of food on the grill. Isn’t that the best?

We use our grill as much as we can. Since it’s warm most of the year here, we use it year-round, but it’s particularly special to grill out in the summer. Since we had burgers and hot dogs twice this week already, we wanted something different.

Pork tenderloin is my personal favorite cut, and I love to throw it in the slow-cooker too, but it’s so fabulous and easy to grill.

I wrapped the pork tenderloins in bacon, drizzled them with a little maple syrup, and then sprinkled them with garlic and brown sugar.It is soooo unbelievably good, you guys. The bacon soaks into the tenderloin give it such awesome flavor, and making it extra tender and juicy. And with the brown sugar, it has a little bit of a candied effect, but also a contrasting bitefrom the garlic. I love it.

I cut up some of the leftovers today for lunch over a small salad of lettuce, tomatoes, blue cheese, and balsamic vinegar!

Ingredients

  • 1 - 2 lb. package Smithfield All Natural Pork Tenderloin
  • 1 - 12 oz. package center-cut bacon
  • 1/4 c. maple syrup
  • 1/4 c. brown sugar
  • 3 cloves fresh garlic minced
  • pepper to taste
  • toothpicks

Instructions

  • Wrap each pork tenderloin with about 4-6 slices of bacon. I had enough bacon that I double-wrapped around some parts of the tenderloin.

  • Using toothpicks, secure the ends of the bacon slices around the pork.

  • Drizzle with maple syrup, sprinkle with brown sugar, and sprinkle with garlic.

  • Season with pepper, to taste.

  • Grill over low-medium heat for 25-30 minutes, turning and rotating the tenderloins every 5 minutes or so, until temperature reaches 160 degrees when tested with a meat thermometer.

  • Remove from heat.

  • Let meat rest for 5 minutes before removing toothpicks, cutting into 1-inch thick medallions, and serving. Enjoy!!
